New to incubating

I will be taking a late egg from my broody either today or tomorrow. Three have hatched and I'm afraid the last one is too far behind. I candled it and believe it's at 11 days.

I bought a brinsea mini ii advance. Are these settings correct:

Day 11
Temp 99.5
Turn interval 180 minutes
Turn angle 8 (silkie eggs)
Alarm high 3.7 f
Alarm low 5.4 f
Cooling off
The water chamber is full

Also, is there a way to shut off the beeping?

I wouldn't fill the water chamber yet. Wait till day 16-17 to fill it.

I think you can stop the beeping by pressing the + and - at the same time. You might have to cycle through the settings and hit save.
 
Do you think for a regular hatch at 21 days, the turning should be more frequent than 180? Like I said, I can change it from 15-180. I think the default was 45.
I think the first week, more frequent turning would be better but your hen took care of that.
People without auto turners usually turn 2 or 3 times a day. You are turning every 3 hours. I think that is sufficient from this point forward.
 
Agreed...every 3 hours is fine. I have, with my Mini had a shrink wrapped batch when I let the incubator run dry for a few days. Only one of seven eggs hatched. I’m not sure if it’s because the fan dries them out faster than a still air incubator but I’ve always found that keeping g some water in the one side of the well, as instructed in the manual, and then filling both wells for lockdown worked better for me but everyone’s situation is different. We

Do you use the cooling feature?
 
I haven’t used it yet but I was tempted on my last hatch. I didn’t and had 10 of 11 fertile eggs hatch and the one that didn’t hatch had a detached air cell. Of course I was using 2 Minis to set this many eggs so beware because chicken math also leads to incubator math! If you choose to use it I can tell you from past experience with my broody Welsummer that she only gets off the nest for about 15 minutes once a day. Sometimes it’s a bit longer but I’ve never seen her go 30 minutes off the nest and she was an excellent broody.

Ambient temperature plays a big roll in how long they stay off the nest.
When outside temperature is pushing 100F they sometimes stay off a couple hours. When it's cold, 15 minutes is usually the limit. They also don't come off the nest every day.

On the Brinsea, the number of days in settings is not the number of the day, but rather how many days. So when you set it to 11 days, that means you expect 11 days until hatch, not that you're on Day 11. Although 21-11 = 10, so what's one more day? For example, when you start from the beginning, you start at "21 days" for chicken hatching eggs.
