New version eggplant parmesan

I came up with this recipe.....I didn't want the traditional heavy version and my DH and I really liked it.

One eggplant sliced into 1/2 inch slices.........slice as many as you want to serve, ie, 4-8 rounds.
Two or three strips of italian bacon, pancetta, or 2 or three tablespoons olive oil
4-8 slices of mozzarella cheese or enough shedded italian cheese to over rounds
4-8 large slices of tomato
1-3 chopped green onions
1-3 chopped cloves of garlic
Salt and pepper to taste
Basil leaves choppped or a little dried basil or dried italian seasoning, sprinkled on each one.
parmesan cheese, one tablespoon to each round.
olive oil as needed

Saute bacon or pancetta til crisp and set aside.
In same oil, saute onion and garlic til soft and set aside with bacon.
In same oil, saute eggplant on both sides til nearly soft. You might need to add a little oil. Use a good non stick pan.
Sprinkle with onions, garlic, bacon
Top with cheese
Then top with slices of tomato
Salt and pepper to taste
Sprinkle with parmesan cheese about 1 tablespoon to each
Cook at 350 degrees about 20 minutes til cheese is bubbly.
Serves as many as you would like. I usually eat two of these with a sauteed piece of chicken for a main dish and low carb to boot.
