No meat night...what do you make?

Ooo, I have a few things I love to make. Falafels, baked beans, spaghetti with veggie sauce, stuffed peppers, roasted veggies just by themselves, black beans with quinoa, lentil casserole, it's quite a long list actually! We usually do a couple of nights a week with no meat.
 
Broccoli and cheese quiche.

Those enchiladas look wonderful.

We have meatless meals 3 to 4 nights a week, can't afford meat lately

Bean and cheese nachos (baked nachos, not fried)
Falafel (from scratch, baked, homemade pita bread)
Chick pea soup
Veggie eggrolls, baked
Quinoa stew
Gourmet grilled cheese sandwiches
Potato and onion fritata
Veggie lo mien
Baked tofu, homemade tofu when I can find all the ingredients
Pickle and cheese plates


yeah.... the list goes on....
 
Roasted Tomatoes and Pasta

2 pounds medium plum tomatoes (10 to 12), halved lengthwise
1/2 cup olive oil, divided
2 cloves garlic, minced
1 tablespoon italian seasoning
1/2 teaspoon Red Pepper, Crushed
1/2 teaspoon Sea Salt
1/4 teaspoon Black Pepper, Coarse Grind
8 ounces pasta, such as spaghetti or fettucine


Directions1. Preheat oven to 400°F. Place tomato halves, cut-sides up, in foil-lined 15x10x1-inch pan sprayed with no stick cooking spray. Mix 1/4 cup of the oil, minced garlic and seasonings in small bowl. Spoon over tomatoes. Drizzle with 2 tablespoons of the remaining oil.

2. Roast 45 to 60 minutes until tomatoes are soft and browned on top.

3. Prepare pasta as directed on package. Drain well. Place 1/2 of the roasted tomatoes and remaining 2 tablespoons oil in large bowl. Coarsely mash tomatoes. Add pasta and remaining roasted tomatoes; toss to mix well. Sprinkle with shredded Parmesan cheese and additional crushed red pepper, if desired.
 
Baked eggplant parmesan with pasta.

Thin slice the eggplant, dip it egg and then bread crumbs, bake at 450* until crispy, top with mozzerella and return to oven to melt the cheese.....sorry about my spelling. My brain isn't working tonight.

I add chopped or ground ham to my Mac and Cheese, and my husband is like "THIS is dinner?!" I can't imagine what he'd say if I served him a meal with no meat in it.
