No meat night...what do you make?

Our favorite is General Tso's Tofu
30 min | 25 min prep

SERVES 4

* 1 (16 ounce) box firm tofu
* 1 egg
* 3/4 cup cornstarch
* vegetable oil (for frying)
* 3 chopped green onions
* 1 tablespoon minced ginger (or 1 tsp dried ginger)
* 1 tablespoon minced garlic
* 2/3 cup vegetable stock
* 2 tablespoons soy sauce
* 4 tablespoons sugar
* red pepper flakes
* 1 tablespoon white vinegar
* steamed broccoli or sauteed green peppers

1. Drain, dry and cut tofu into one inch chunks-You can freeze the tofu the night before to get a more"chicken-like" texture, if desired.
2. Mix egg with 3 Tbs of water.
3. Dip tofu in mixture.
4. Sprinkle cornstarch over tofu to completely cover.
5. Heat oil in pan and fry tofu pieces until golden brown and set aside.
6. Drain oil.
7. Heat 3 Tbs vegetable oil in pan on medium heat and add onions, ginger and garlic, cook for about two minutes (be careful not to burn garlic).
8. Add vegetable stock, soy sauce, sugar, red pepper flakes and vinegar.
9. Mix 2 Tbs of water and 1 Tbs cornstarch and pour into mixture, stirring well.
10. Add fried tofu and coat evenly.
11. Serve immediately with steamed broccoli over your choice of rice.

Tofu is really cheap at Trader Joes.

We also like black bean soup, falafel, risotto, chinese fried rice, sushi (cappa rolls made with cucumber instead of fish are really inexpensive to make), au gratin potatoes, roasted greek potatoes, brown rice and lentil cassarole, and bourbon tofu. I'm a vegetarian.

Cheese Quesadillas.

Sandwich cheese and pico de gallo between two flour tortillas and heat like a big round grilled cheese.
 
This sounds really good but the closest place around here I would be able to find tofu would be if I drove 70 miles into Houston...these little backwater towns don't have stuff like that.

I've never heard of falafel until I read about it on this thread, the beans, risotto, fried rice and potatoes I know how to and can do...the rest of the foods are a little to exotic for this area to find the ingredients.

I didn't even think about the availability of the ingredients, sorry! It's pretty easy around here to go to an Asian or International market.​
 
We make our own tofu, can't get it out here either.... and the falafel.... Chick peas are $1.26 a 1 pound bag from Walmart

or you can buy canned.... I can't even buy pita bread out here so I have to make that myself.

The local grocery doesn't have a bakery so I make most of my bread too. It it ain't beef, avocados, tortillas or potatoes no one out here has a clue what to do with it. I've lived all over and like my international foods, just wish I had better greek recipes and $$ to drive the 100 miles to Austin to get half of the foods I'm used to so I don't have to make everything from scratch.

well, since I'm a vegetarian all my meals are meatless...We eat alot of quesadillas, veggie chili, vegetable soup, lots of different pastas..we are vegetable farmers so usually have lots of fresh veggies around..
 
-Vegetable or bean soup or chilli
-vegetable stir fry with brown rice
-LOVE ratatouille (zucchini, eggplant, tomato, onion, pepper, dill, basil, garlic, touch of sugar/salt/black pepper) on pasta
-quiche
-cheese grits with roasted vegs and balsamic vinegar
-pancakes
-veg strata (savory bread pudding with cheese and vegetables mixed in)
-cheese and apple omelets
-open faced omelets with lots of toppings (pile toppings on omelet like a tortilla rather than fold it in half)
-curried chickpeas and/or cauliflower
-pecan, oat & brownrice veggie burgers
-hummus and pita with veggies
-pintos and greens (kale or collards preferred) with cornbread
-congee(jook) with toppings such as green onion,cilantro,tofu,etc (use chicken broth to make it, or use a very inexpensive single turkey wing to make about 10 cups of congee/jook which is cheap and filling chinese comfort food)
-saute of shredded carrot/zucchini/onion & butter on pasta (use a bit of pasta water to bring the dish together into a sauce)
-spoonbread (soft cornbread souffle) with roasted tomatoes
-rice with stewed tomatoes
-baked potatoes double stuffed with leftovers
-pizza pockets stuffed with mozzarella/herbed ricotta/peppers and onions with marinara sauce.
-huevos rancheros

big list.... on and on!

That's quite a long list...I'll have to look up most of it. I'm afraid that this old country girl doesn't know what most of that stuff is.
