I see yellow webbing on his feet, which means that's a Jersey Giant, not an Australorp. Hatcheries seem to mix up those two breeds a lot! And yeah, that's a cockerel.

JG's have a yellow underfoot, Australorps have white...lol!!
If you can find a pullet that is about the same age as your current ones, then you only need to get one. If you can only find young chicks, then you will need two because it will be a few months before you can safely introduce them.Thanks! So if I introduce a new one in, do I need to get 2?
