4 and 10 I've wondered about.. but 8 I wouldn't have thought! About what age would we be able to know for sure?

Maybe 3-4 months, even earlier. Rooster's start getting very big red combs and waddles, it is quite easy to discriminate them from the pullets by then.

Both are definitely cockerels.
