I made this up one night when I had more mouths to feed than food. I serve it warm in cool weather and chilled in summer. It is a definite hit with everyone! 1 pound penne pasta 1 pound chicken breasts (bone in, skinned) 1 pound romaine lettuce 1/2 pound cherry or grape tomatoes, halved (I have omitted) Caesar dressing to taste (about 1 bottle) grated Parmesan cheese to taste Poach chicken breasts in water until done. Cool in poaching water. Bone and cube. Toss lightly with Caesar dressing. (I reserve liquid for making stock.) Cook pasta according to directions, drain and toss with Caesar dressing. Combine chicken with pasta. Add tomatoes and romaine. Toss well. Add more dressing if desired. Sprinkle with parmesan and toss again. Serve with crusty bread.
