MMMMMMM! I am not polish but grew up in a Polish communuity. I love kapusta and perogis. Lucky you! The potato perogis are the best!! I haven't had them in such a long time. I don't suppose you have ever been to a perogi pinching party?? It is the time or year for them!!

Yeah that makes sense to me. Sounds like old tradition to me. My grandma taught me and her mother who came over from switzerland taught her. I'm behind making it because life has been so busy. I enjoy making food and crafts. I guess I like working with my hands. Today I'm hoping to get my apple trees covered before the wild bunnies decide to eat them.
 
I did buy some at the Regional Market a while ago and the Ukrainian church here in Syracuse usually has a sale, but DW is good at making them too. Of course they can be frozen and we have a new freezer so she has no reason not to. Kapusta is another story, not my favorite and it must be a depression thing cuz it has no flavor. I just add lots of salt and pepper. I always ate a spoonful out of respect for my in laws.

We Irish only have one tradition on the holidays I think. Get drunk and have a brawl. Just kidding. I'm sure there's something, I just never learned what it was.

Now Lord have mercy, what am I going to do with these roos? I can't even give them away. I've got one who will make a nice Sunday dinner. I breed Dels and I'm working on improving the meatiness and I've got some roos that are right there. The hens are another story. I can't find anyone to process them at this time of year and I'm considering putting together a set up and if I can do it without throwing up, put myself out there to do it for others, or take all the free roos folks give away.
I have plans to build a roo house, just for them. Still they can't live forever.
Anyone here have a set up they use and got pics. A nice design would be nice to see. I was at Gander Mountain and they had a nice two burner stove that would be good for heating water.

Anyone going to be interested in EE hens later this year? Ok early next year?

Do turkeys eat that much more than chickens? I would assume more because they're bigger, but a lot more?

I couldn't find anyone to butcher my surplus roosters a couple months ago. My aunt ended up doing it for us in trade for finding her a billy goat. I already got more unwanted roosters from my hatch at the end of august.

I couldn't find anyone to butcher my surplus roosters a couple months ago. My aunt ended up doing it for us in trade for finding her a billy goat. I already got more unwanted roosters from my hatch at the end of august.

Actually, I don't see that they eat that much more, but they are BB whites, and getting bigger. They chest butt the gate to the stall, kinda funny, but I think they are around 20lbs now.

I also want the space for other chickens that need it.

Don't know about turkey's except the guy who Sue recommended charges $5 for turkeys' and $3 for chickens. I couldn't find anyone til now and he seems real nice. Unfortunately chickens don't get fat on a schedule and when I have broodies hatching chicks you can't plan these things.
Having your own set up is hard and expensive. This guy says I can help though I've never done it, I expect my pride will take over so I don't throw up the first time.

Don't know who you aunt is but she sounds real nice. Lots of goats out there and I have a friend from Ghana who was the designated goat killer for his family back home.

Did I mention my wifes polish family is from the Utica/ Roma area. Her last name was Ucher pronounced usher and her Uncles last name was Kugla and her grandmothers name was Kula. They came over during the war. Her uncle escaped to the US. We've got letters from his sister in Polish but no one here can read them. Her aunt couldn't or wouldn't her uncle never talked about his sister. He was afraid to go back to see her cuz he was afraid they wouldn't let him come back to the U.S.​

He said you could help? I would love to help, didn't even think to ask...could learn to do it myself if I learned how, I've dispatched sheep, & chickens that were sick before, but didn't gut them, so don't really know how. I wonder if there is a mobile processing unit in this area that is for rent? I'll have to check into it.
