Ok NY peeps.. Whatcha think? Roo's? Pullets? Too early to tell? One is a EE, the other a lt Brahma.. Both hatchery chick sexed and sold as pullets.. 7/8 weeks old., thanks..

I was planning to start canning. It's that or buy a third freezer :) Do you can just the meat or leave the bone in, and do you raw pack or precook?

Before you begin canning meat you should to some research. You want to make sure you're doing it right. I personally don't do meat because it would mean buying a pressure cooker for over $100 and too I'm to afraid of messing up.

I'm even nervous about the jams and jellies I do. The rules have changed since the old days and I wonder how many people died of undiagnosed food poisoning.

I do tomatoes too, but have learned that some of the newer varieties don't have the acidity of the old ones and they need special treatment. I did not know that and used a mix of yellow and red tomatoes. Yellows are sweeter and I should have added some lemon juice I think. Future cannings will not have yellow tomatoes in them.

I do hope to buy a pressure cooker sometime. Maybe when I win the lottery?

Where did you get them?  Do you have pics of their legs?  EE's are tough to tell. 

Deatons agway in my local town. I dont know what hatchery they get them from. I didnt ask. I can. I dont have any recent pictures of their legs but my next trip out I can get some. This one stands out to me because of the longer tail. I could be just jumping the gun, its comb is still a pale yellow and small like the others.

I called them.. They got them from Ideal Hatchery and Mt Heathy Hatchery. The EE's were sexed but only a 98 percent guarentee.. (Also sold as Americauna's). The Light Brahma's were sold as straight run.. I was told they were pullets..Im not happy!!! If I was told they were straight run, I would of not bought any!
 
I think I bought my large pressure cooker at Walmart for $69. I've already saved more than that by canning my tomatoes the first year. But like you I'm worried about canning meat. Lots of videos on YouTube about it.
 
This is the update to my jam post. I made the 2nd batch the "old fashion" way that I saw on YouTube. It came out perfect. The first batch has jelled some more so although it's not quite jelled like I wanted it I'm going to leave it and not redo. Also the old way uses less sugar. No pectin at all so it's less expensive. Just boiling it longer. So easy!
