I would love to help with the co op. I can't keep anything growing in my yard thanks to my beat pack and animals, but am willing to help someone else with there's.I did see something on tv today about growing food all year round in your house. I'm sure I could do garlic, chives, and other root plants.
Here is a link to 16 foods you can regrow from the scraps (indoors).

I get hundreds of ideas from pinterest. How to reuse/repurpose things. How to save money.
I live on the west side of Cleveland and we use vacant lots as community gardens. The plants are donated from somewhere and they are planted then harvested used to feed the neighborhood. If I could find out how its funded maybe it could help in your town.
I love all these ideas! It would be awesome to be able to use everyone's strengths to help a group. I wish more people did things like this. I always start extra garden crops and donate to those I know will use them. A friend of mine just lost her husband and is on her own the first time. I gave her a full fall garden and showed her how to plant, tend, and harvest. Will help her store it when it comes as well. She and her little girl are so excited about learning more, and I am going to help them set up a small coop/run for a fewchickens. I wish more people helped and taught instead of shaking heads and saying "what an idiot "!
