For a winter structure, the main thing is to keep them free of any and all drafts. Also you can add a little more bedding to their coop for added heat. On cold days when they may be locked inside, hang a head of cabbage, lettuce, broccoli,etc from a nail about four or five inches off the ground. They will peck at it and it will give them something to do. This will also prevent them from pecking each others feathers.
As in harvest do you mean butcher, Sorry I have never heard of harvesting them. I am kinda new to this chickens thing too. If you want to butcher them, I am not sure of too many places in the area. I have a friend that takes his extra roosters to be butchered. I can give him a call if you would like.
