You should leave them in jar for min of 2 weeks to get good flavor. the longer they stay in jar, the better. When I was dfoing the quail eggs it was the hardest part, not eating them before they had time to age a little.

Ksane - beets are a vegetable.We used to pickle beets with vinegar, cloves and other spices in jars, but we cooked them first. They'll keep for a long time and taste great that way, if you like beets. I like them pickled that way but not sure how they'd taste without all the spices. It's worth a try to see how they turn out.![]()
Edited to add that I haven't pickled beets in several years. If you'd like for me to find the recipe, I'll look for it. They might turn your eggs pink.

I only made 8 because I wanted to make sure the shells would really melt off. I'd have never believed it could be that simple if I didn't try it myself lol I just peeled them and ate them without putting any spices or anything in there, they were still pretty vinegar tasting though. I'll do my best to let the next batch sit a few wks but I don't know.....I'm not very good at that self-control thing.
