We used to pickle beets with vinegar, cloves and other spices in jars, but we cooked them first. They'll keep for a long time and taste great that way, if you like beets. I like them pickled that way but not sure how they'd taste without all the spices. It's worth a try to see how they turn out.

Edited to add that I haven't pickled beets in several years. If you'd like for me to find the recipe, I'll look for it. They might turn your eggs pink.

Today while out checking on all the chickens I found a new face peeking out from under the pile of broodies. I took it and put it in with the other two newly hatched ones. The hen scooped it right up and it caring for it. I thought that would be the best thing for it rather than possibly getting trampled to death with all the other birds. Plus, with the other chicks it will have access to medicated chick feed and a waterer that it can reach without drowning.

The newest one is the one in front. It's whiter than the other two. Does anyone know what that means? Will it be white? I thought that yellow chicks turned white anyway, but this one is already white. All three of these are from the smooth feathered Serama bunch. They're so tiny and cute!

Howdy all you Okies. We have had a busy two days, went to Newcastle last night. Thanks to Jack I got a good overview of my Marans. (and was convinced I needed more, lol). SO I came home with 22 bared rock chicks (day old), 2 barred rock hens (FINALLY found some I could be happy with the price) and a pair of Jack's Golden Salmon Marans. That takes me to 3 golden salman hens and 2 roosters. Our RIR rooster will be coming home tomorrow or the next day. He will live with the barred rock hens hopefully giving me some black sexlink chicks.

We got outside after church this morning and kicked hiney putting together the chicken condos. We got another coop finished and about 75% done with another one. DH just has to put the wire on the top and put the roof on the house part of it. Got all the stalls raked out and new feeders installed in all the coops. DH still has 2 full coops and the parital one to finish. Hopefully the weather this week will allow that. Today was such a pretty day and it was nice to spend it as a family outside working together.

Glad we were outside working because one of the heat lamps in the brooder with my 3 week old chicks had gone out for some reason. I caught it before the bulb cooled. Gonna have to think up a back up system for those kinds of things.

Hope everyone had a great weekend. I am not ready for my work week to start but gotta get it over with so I can get to my weekend.

You should leave them in jar for min of 2 weeks to get good flavor. the longer they stay in jar, the better. When I was dfoing the quail eggs it was the hardest part, not eating them before they had time to age a little.

I had to move mine that I made the other day to the garage to keep from eating them. I
TEST one a day, just to see when the are ready. lol

Deanne, the babies are too flippin' cute!!! I don't know about the white vs yellow question though. The beets I got are canned beets, I wanted the beet juice on purpose to turn the eggs pink :) They're whole canned beets so they should work pretty well pickled. I'm going to start out simple 1st and see how it goes.



Men. They'll suck the life right outa' ya.



I only made 8 because I wanted to make sure the shells would really melt off. I'd have never believed it could be that simple if I didn't try it myself lol I just peeled them and ate them without putting any spices or anything in there, they were still pretty vinegar tasting though. I'll do my best to let the next batch sit a few wks but I don't know.....I'm not very good at that self-control thing.

LOL well we go to early service so church service is at 8:45 and we are out of sunday school by 10:30 and home by 11:15. We started on the coops while our oldest son came in and made lunch. Plus we had handy little errond boys ages 7 and 9 (you know they still find going and getting this and that fun). Now the 14 year old boy his help was marginal for a while until he remembered that he sketched pictures of the nesting boxes that sold last night in Newcastle. Then he got some old partical board out and made a trial one. He did pretty darn good. So now he wants to go buy some plywood out of his money to make them to sell. Does anyone think they will sell? He is thinking craigslist to sell them. I don't think he would break even with auctions.

Then not to mention we ditched evening church, they were having a chilli cook off which I hated to miss but we have waited a week to get anything done on these coops. I can't wait for it to all be finished so I can share pics. Of course we have already "outgrown" what we are building. Now we are building different quarentine coops and making a batcholer pen. Then I want to redo our brooders in the feed house. Always a list of things to do, lol.
