DH remarked earlier today that he missed not having an auction this weekend! I wondered what is on TV Saturday nights?OK we can not have to many more of these "no auction" weekends! I work to hard on the off weekends without an auction to go to.
I have a question. Who washes there eggs as soon as they gather them? Should I be washing them before use or as soon as I bring them in the house? I have read that they have a natural coating on them that helps keep them fresher. Just curious what everybody thinks.

I sell eggs so wash them before I put them into the carton. I don't wash them immediately upon collection because I feel like the cuticle/covering on the egg keeps bacteria from going into the shell and don't want to remove that protection until the eggs are ready to sell.
On the same topic, does anyone have thoughts on the topic of leaving eggs at room temperature? I have heard that if you haven't washed the eggs they can be left at room temperature for a week or more without deterioration. I wonder how the egg quality is affected - whether the yolk stays round and plump or if it flattens out when broken into a pan. Also, any thought on whether refrigerating the egg starts some kind of chemical process such that the eggs have to then remain refrigerated in order to keep from deteriorating?
