Well, it turned out to be fewer than 100. That was the original order of Cornish X, they processed 20 last week for practice, and lost 15 to various calamities including several that died of CHF the day before processing day. As hot as it got Saturday, it's a good thing he didn't wait any longer or he probably would have lost a bunch more.
Because the killing is the hardest part for me, and of the Salatin techniques I most wanted to learn was how to kill humanely by slitting, I took that duty. He killed a few to show me how it went, his brother-in-law took a couple, and I did the rest. I probably did 50 to 55 of them myself. My thinking was since they were going to be slit anyway, I might as well do it and see if it can really be done humanely.
It can. I think I now like it more than chopping, since the bird seems so much more relaxed this way.
I got to the point where I was concentrating so hard on doing it right and making sure it was a quick and humane death that the fact I was doing it somehow slipped to the back of my mind. They were also very fast (I timed Grady eviscerating a chicken in 25 seconds), so I had to keep up my end.
Anyway, this setup helped speed things up considerably....
Speaking of which, he plans to rent this setup out at extremely reasonable prices if anyone is interested. Keep in mind it is legal to process and sell without inspection up to 1,000 bird units (a turkey equals 4 bird units, a chicken, 1) annually.
