Okra!

I love okra too, sadly mine is only 6 inches tall. It has been the coldest July on record here. So no okra for me this year unless I buy it at the store.

The pods that are about the size of your pinky finger are wonderful sauteed in olive oil and garlic. The smaller pods can also be put on the wooden skewers, use two skewers with the okra across likes rungs on a ladder. brushed with olive oil, and whatever and then grilled.

I freeze alot of okra, but haven't been too successful pickling it.
 
A Turkish friend makes it this way:

Saute sliced onions & garlic in olive oil until the onions are soft
Add ground beef and cook until the beef is no longer pink
Stir in a can of stewed tomatoes, mash the tomatoes with your spoon into smaller pieces
Add sliced okra and cook until the okra is done (I've used frozen okra and it takes less time than the fresh to cook through)
Salt & pepper to taste
Serve over plain white rice (she stirs a pat of butter into the rice)
Mix salt into plain yogurt and add a spoon to your plate of rice & okra mixture
 
My MIL makes an okra & shrimp dish that is very good. She starts by getting out her electric skillet & sauteeing onion in some cooking oil, then add cut okra & salt. She covers the skillet & turns the heat down to let this stew for a LONG time, stirring occasionally. When it is cooked into a sort of mush, she adds shrimp and cooks until the shrimp is done. It looks nasty, but is VERY tasty.

I put it in my spaghetti sauce for a new taste, not to mention Catfish Stew and Jambalaya. It is also great in scrambled Eggs and Mushrooms. Yum! this is making me want to cook some up

Love okra fried and with ranch dressing. I've been frying some up every few days lately. I plan on freezing some already breaded to enjoy this winter.
 
shrimp okra gumbo
okra and onion add a touch of vinager to take slime out
quarter up about 2 or 3 roma tomatoes cook down for about 30 min
add shrimp and several cups of water and seasoning
let cook for about another 20 or 30 min and enjoy
