Old turkeys

    How long do year-old turkeys take to age in the fridge? I'm guessing the same time that a chicken of identical age would? [​IMG]

    We age whole turkeys for 4 or 5 days. Make sure you keep them covered so they don't dry out.

    Stupid question maybe, You have to age them in the fridge before you freeze them?

    No you don't, some people do it when they are thawing the bird. I always age first but when you think about it and if you thaw in the fridge for a couple days you are doing the same thing.

    I put them in a big roaster pan with a lid, it's not air tight. I think we age longer than most people do.
