ons for source of Speckled Sussex for 4-H Project Next Year?

The eldest son and I had a new 4-H project of Speckled Sussex from Cackle Hatchery (through the local feed store). We really like the temperment, thriftiness and calmness, but suspect we may be told at the fair that they really aren't quite right for the breed.

Would any one be willing to recommend a source of Speckled Sussex of SQ or close for next spring? We are in West Central Wisconsin.

You have Ameraucanas, have you found the culls worth eating or are they fairly gamey (this is what I have heard).

We also have 5 Ameraucanas from Morrow's Whitmore Farms (at the ugly adolescent stage) and are just wondering what to do if we get too many roosters...
