Sure. Its at the bottom. I will share the cheesecake recipe after I make it. This way I know I got it correct.

Making cheese always looked like a fun project. You're a talented guy Cavey!
Learned it from mom. She made it mostly during summer when the temps were hot. The milk was on the kitchen counter to sour. She did not have the contraption I put together. If the kitchen temperatures are just 70°F , the milk just does not want to sour in timely fashion. I would not want to wait 3 days for it to happen. With my setup, it is done next day.

The cheese can be made without the crockpots if your kitchen temps are over 80°F for the duration of the souring. That is how mom made it always. (summer).

Here is the recipe ingredients.
4 cups of shredded apples. I got that amount from 4 large apples. I hand shredded the apples, skins and all on a cheese grater. The Pyrex container is a 1 quart size in pix.

This is the grater I used.

1 hefty teaspoon cinnamon.
1 hefty tablespoon Cocoa.
1 hefty tablespoon Baking Soda.
1 and 1/2 cups sugar. Mom used 2 but I cut back.
2 cups flour. little extra is OK also.
1/2 cup of oil. I used Canola. Mom used mostly Corn Oil.
3 large eggs.

This was only cake mom used baking soda, instead of baking powder, or yeast.
I researched a little about the use of baking soda. The apples provide the acidity to make the soda work. Baking powder has some powdered acid in the ingredients, with baking soda being the working portion of it.

I also just used teaspoons, and tablespoons from silverware drawer. (not measuring size like I should have) I know I would have been banned from participating on this show. :gig:lau

In mixer I added eggs first, beat them some, added oil, then sugar, cinnamon, cocoa, and baking soda. I then added the flour. The mixture did get kind of thick. When I added the apples last, the mixture did get somewhat runny. I did not over-beat the mix with the apples in it, just sufficiently to get it mixed in.

Poured it out onto a well greased pan with wax paper lining.

At this point, I was slightly worried if this liquid-y looking thing was going to rise into a cake:idunno
I do recall trying to make carrot cake many years earlier, with disastrous results.

Here is another pix of finished results. I bake for 45 minutes in preheated oven at 350°F, and then checked with a toothpick to make sure it was done. :thumbsup

Thank you so much for taking the time to share this...it looks delicious & I'm looking forward to making it! One of my husband's favorite cakes is an applesauce cake with brown sugar frosting, it's one his mom always made! 💞

Post that recipe here... :thumbsup I'm excited to try it already. LUV:love anything apple based. I will make a cake/dough like for the cheesecake recipe, and substitute apples for cheese. Mom did that one a few different ways. She also made it with plum halves.. Gosh,,,,, I cant wait to start baking again. :drool:drool:drool:drool:drool

Oh yeah...it's r e d with a little bit of h o t, oh baby, r e d, red h o t, red hot, red hot, red hot...:gig

This was a cheer my daughter did when she was a high school cheerleader! 💞
I immediately started singing that like a cheer 😆
 
@cavemanrich I'm going to share a couple of recipes!

Applesauce Cake with Brown Sugar Frosting

Cake:
1 1/2c Sugar
1/2c Butter
2 Eggs
2c Applesauce
1c Raisins Chopped (best if run through a grinder)
1/2c Chopped Nuts (optional)

2c Flour
1 1/4 tsp. Baking Soda
1 tsp. Cloves ground
1 tsp. Cinnamon
1 tsp. Allspice

Cream sugar and butter, add eggs, applesauce, raisins & nuts.
Mix dry ingredients together, then combine with the sugar mixture.
Pour into a buttered and floured 9x13 pan.
Bake at 350 about 50 minutes or until center springs back up!

The frosting is a bit tricky to get just right it can come out a bit crumbly if over cooked. Sometimes I get it perfect...sometimes not so much, but it still tastes fantastic! It is quite sweet!

Brown Sugar Frosting
1c Sugar
1c Brown Sugar
1 Tbls. Corn Syrup
3/4 Cube of Butter
3/4 Can of Canned Milk

Combine all ingredients in pan. Cook on med/high heat to boiling...Stirring constantly! Cook to soft ball on candy thermometer! Pour on cake...spread...eat and enjoy!
 
This cake came from one of the cooks at my husband's elementary school. His brother asked her for it and it is a family favorite! It always comes out super moist and tasty! His family likes to put 7 minute frosting or Vanilla Sauce on this!

Mary's Cake
Part 1: Combine:
2 cups Flour
2 cups Sugar
1 tsp. Salt
3 Tbls. Cocoa Powder

Part 2: In a pan combine:
1 cup water
2 Sticks of Butter
Bring to a boil!

Part 3: Combine:
1/2 cup Buttermilk or (1/2c. milk + 2 tsp vinegar)
1 tsp. Baking Soda
2 Eggs beaten

Pour 2 over 1, then add 3 and mix. Pour into a buttered and floured 9x13 pan.
Bake at 350 degree's for about 35 minutes.

Vanilla Sauce
1 cup Sugar
2 Tbls. Cornstarch
2 cups Water
1/4 cup Butter
2 tsp. Vanilla

In a pan combine sugar & cornstarch.
Add water and bring to a boil, stirring constantly.
Continue to cook 1 minute until slightly thickened.
Remove from heat and stir in butter and vanilla.

While still warm pour over individual servings of cake and serve right away! This can be reheated!

7 Minute Frosting (the title is misleading it always takes longer...:) )
In Double Boiler combine:
2 egg whites
1 1/2 cups Sugar
1/4 tsp. Cream of Tarter
1/3 cup Water
2 Tbls. Corn Syrup
1 1/2 tsp. Vanilla

Beat over double boiler with hand mixer until stiff! (my mother in law used to use her hand cranked double whip...I use my electric mixer!
