You can use white wash. It is agricultural lime mixed with water. The lime will help neutralise odours and it also helps to deter mites. It's quick and easy and isn't harmful to the hens. It iasts about a year or so.

Oh, interesting! I can get behind that too. I was just thinking of preserving the wood longer and hopefully being as nontoxic as possible, I wasn’t even thinking there could be a health benefit too.
 
Sorry, It's hydrated lime not agricultural lime. Hydrated lime for painting, agricultural lime for soil! Both are safe in the coop and run. Wear a mask when mixing because of dust and add salt to help it stick better.
