Would I be able to win a bottle over noise complaints on roosters or peafowl in court? Or is it a longshot

I seriously doubt it, but it depends on your local ordinances and zoning. Are you zoned for livestock? How about exotics? Roosters are one thing, peacocks are another, I don't think your neighbors are being petty, I'd hate living next to pea fowl too.

Where are you? As @BlindLemonChicken correctly observed, where you are determines your Ordinances, which will have a lot to do with your likely success. As, frankly, will the Judge.

I'm not sure if I would call this a reliable source (.com rather than .gov site), so take this with a grain of salt.

https://patch.com/georgia/decatur/raising-backyard-chickens-decatur-5-things-know

"In the city of Decatur, regulations state backyard chickens are allowed with the following regulations:
...
no roosters are allowed;"

Are you absolutely sure that you are allowed to have a rooster here?

Another potentially better source:
https://library.municode.com/ga/dec...eId=PTIVUNDEORDEGE_ART12DE_S12.1DETE_12.1.1GE

"Market garden, large. An area of land greater than two acres that is managed and maintained by an individual, group of individuals or organization for urban agriculture. Animals used in food production hall be permitted with the exception of roosters. Animal facilities shall be setback a minimum of 75 feet from the property lines."
