They do know what they are doing. Usually the eggs are about 2 days apart or so. Once the hen starts to sit/brood on the eggs, start counting the days from there. Just like with chicken eggs, they do not start to develop until the hen starts to full time tend to keeping them warm.

You already know that both mom and dad take turns keeping eggs warm. I'm just mentioning this to other readers that may not be aware of this. In chicken country the rooster never helps out the hen..
