So we shouldn't fool with it, right? Does this mean that the girls are kinda rare?

Don't fool with the crest. No need to do anything at all.

I wouldn't say that ducks with crests are particularly rare. They pop up regularly, especially out of hatchery stock.

The actual Crested Duck breed may be considered rare in the US but I am not sure. You don't see them here in Australia very often. Their crests are much bigger that your girls' crests. Today we took our girls out for a swim - and noticed that Goose has a small poof on the top of his/her head as well! I didn't think Mallards had this - maybe she's a mix as well:
You can see it pretty well against the black of Daffy.
