The main thing is thru expermintation you get better at Kefir making and the longer you make it you find just the right combination of grains to milk and it gets a lot mellower! This is coming from someone that has only been making Kefir for about a month

AND You can use it in anything you use milk in
I made pancakes for me the other day and used Kefir in place of the milk and it was great

Ok I have a question and I think I know the answer BUT wanna make sure I know with Kombucha you need to keep it away from metal and store in Glass Jars But the question is the lids for canning jars!! So the question is if you use canning jars to decant your Kombucha (Or Kefir) is it OK to use the regular canning jar lids or do I need to get plastic lids?????

This is for storage Joe after the Kombucha is made I have been storing it in a gallon glass Jug but I wanted to Decant it into some smaller containers to keep in the front Fridge instead of running back and forth each day to get a glass full!

I use one of the wal mart glass jars to make it in like you had in the first post or so!!

I would think you would only worry about metal coming in contact with it. If you were really worried, you could just put a piece of plastic wrap over the top and screw the lid over that.
