IKR I think you said that you were fermenting yours for like 14 days and using more sugar (which I may try) (2 cups to my 1.5 cups) Mine was done in 9 days the first batch and I removed the last one in 7 days after I taste tested it! Right now I am making 2 different batches in my homemade Kombucha incubator One with organic black tea and Another with My Organic green Tea! I am curious to see how the Black tea taste and am going to try a Red Roobios tea next! Time to start the expermentation process to better health for Me flock!! I do love the taste of the green tea Kombucha the problem is going to be keeping up with demand!! LOL

Ernie

Ernie, I'm here with my daughter in Florida, and she too is doing black and green tea. She and her boyfriend both prefer the taste of the green tea, but I don't have any info about the green's fitness for kombucha. Historically and worldwide it's always been ONLY unflavored black tea used. It's "possible (?)" that the processes for making the two kinds of tea determines one's being better than the other... regardless of taste... I don't know.

Not sure either Joe but am going to compare the Two and see if I see any difference in them and their benifits! I don't as of yet have a comparison for the 2 because I have only had the Green so far but in a few days I will be trying the black tea and see if I notice any Physical difference in them ! I do know after drinking the green tea I do notice my sleep patterns being better and my problems with sinusitis is possibly not as bad (Could be the Kefir too don't know)! I do know that I am feeling a little better though with both of them! The Chinese believe in the medicinal properties of the green tea but they also make tea from almost any herb or plant that is know to man! So I am guessing that time will tell! Either way I am sold on Kombucha and Kefir and will continue to make it for me an my flock! Wish I could find some goats milk here to try it with! Hopefully I will be able to soon!!

Thanks Joe and Merry Christmas

Joe and Ernie! So glad that you are enjoying the kefir and kombucha!

I use organic green and or black tea depending on what I am in the mood for. Sometimes I mix them together, I never put vinegar in mine,I like it better that way. As far as length of fermentation, sometimes it depends on how patient I can be. Sometimes I drink it after a week, sometimes at 4 weeks...all depends. As far as kefir goes, my favorite is 1/2 a mango and some kefir, in a blender for breakfast! YUM! Birds get whatever I don't eat. They love it too!

Joe
I did a little reasearch and came up with this website that might help! I haven't read a lot of it yet but found it very interesting and maybe it will help ALL OF US drinking Kombucha to decide which tea to use for our Kombucha!!!

I take the kefir grain out, put it in a clean jar and pour milk into it. Cover with paper towel and rubber band. I wait till the next day (or two) and use. I like to let it get thicker so I wait a little longer. (then the mangoes...or bananas..or strawberries ...or.....)

My kombucha I make in gallon jars. Tea goes into a large teaball. Pour boiling water with 1 cup sugar into jar.(teaball hangs on the side). How long I wait to drink it depends on when I run out of my last batch. I do prefer certain brews over others, but they are all good! I haven't made one that I didn't like. Except of course the one that became contaminated with fruit flies. There are times when I know that I won't wait for it to brew longer, I will decant it into smaller jars with no scoby and start another gallon jug. The smaller mason jars can be refrigerated and drunk at will. They sometimes will grow their own scoby.....then I have lots of babies. I hate to waste but there is not much that you can do with all those scobys! They go into the compost.
I am glad that you are enjoying your fermenting experiences!

Here's to you health,
Ginny

Ewwwww Fruit Flys that would put a real crimp on the Kombucha drinking with the fruit flys in it! I am going to go out tomorrow and get some mango and paypaya tomorrow and try to make some fruit smoothies with the Kefir even thou I like to drink it straight never hurts to change it up

Yea OoLong is just a black tea! Was theirs a dried culture or a live culture! I just wonder why they said it would take 28 days! My mushroom started forming in 3 days and was full and tea done in 9 max!?

Ernie

It was a dried culture, so what does that mean? just that it takes longer? Where would I get live cultures, just google it I guess...

TrystInn, thanks, those were very good articles, and I agree with the author of the first. However, he recommends yogurt because of the probiotics, so I'm guessing that he'd do the same for kefir (?). I also agree that plain milk should not be given to chickens; he said not more than 4% of their diet. I would not even make kefir or yogurt or buttermilk more than 4% of their diet. Great articles! Thanks again.

Can I ask what type of 'tea ball' ? I have only seen them in metal and they say metal is a no no when making kombucha.

What state do you live in Erlibrd! When you are making Kombucha you always have a ready supply of Cultures!! So if you were close enough I would send you one! Otherwise here is a website that you can order live cultures of kombucha and Kefir if you like! Guaranteed to grow and alive! I got my kefir from there and it was alive and made a quart in the first 24 hours

http://www.kefirlady.com/orderkefirgrains.htm

She also sends out complete directions with her cultures
