I started the incubator yesterday with a mercury thermometer I trust to check the thermostat. If it's working fine, I am going to start collecting eggs to hatch. We get 8-10 eggs a day, you think I can collect them for two weeks and then at them all. I can put 120 in the incubator egg trays.or should I just connect for 1 week and set what I get?

I wouldn't set two week old eggs.

Your chances of having good viability of the eggs diminishes after 10 days. You could still have decent viability with 2 week old eggs but that would depend on how they were stored.
I personally, don't set eggs older than 10 days.
