I know I should quarantine new birds before adding them to my flock. But other than time passing, how would I know if they're healthy and okay to integrate with my existing flock? Are there good or bad signs to be aware of?

Look for lethargy, sneezing, nasal/eye discharge, etc. An obvious sign of a problem.
Anything they carry should show up well before a month. 40 days is the traditional duration.
At the same time, look them over for lice and mites. A fecal sample read for worms is a good idea or you can use a comprehensive worming medication.
