recipe: Southern Fried Chicken

Ingredients:
- chicken cutlets, breast, thigh, legs,
- large frying pan, or iron skillet
- lard for frying, or shortening, or plain ole' vegetable oil, I use lard or shortening
- pepper
- salt
- 1 large egg
- buttermilk
- garlic powder
- 2 cups of all purpose flour

Instructions:
1. whisk together egg and buttermilk and add, salt, pepper, garlic powder and mix well and set aside.
2. place flour in a large bowl or a large bag. with salt, pepper
3. take chicken and place it in the flour mixture first, then in the egg wash, then back in the flour, then back into the egg wash, then back into the flour, this makes a crispy crunchy crust
4. heat oil in skillet about 1 1/2 of oil in the pan
5. fry the chicken until the outside is golden brown and when you press on the chicken its hard. IMPORTANT! fry on medium -low, or the excess flour in the pan will burn and it will be a foul smell and you will have burnt chicken!
6. take out and place on paper towel to dry up extra grease
7. serve and enjoy!
 
i make mine similar, but i "marinate" my chicken in the buttermilk overnight. it is the best way i have ever made fried chicken. i also add some baking powder to the flour. maybe a teaspoon.
