Recipes for a Dehydrator

Jerky recipies are easy to make yourself......Find your favorite sause or spices and soak it over night or longer than put it on the dehydrator. You just have to watch the jerky and check that you don't over dry it. Once it starts getting a shin or oil on the meat you should pull it off. Its really hard to screw up jerky as far as flavor but easy to over dry it and turn it into something the dog wont eat.

get some slim-jim size edible casings(one source is www.butcherpacker.com they have a minimum order but the savings are great there) and use your jerky gun or sausage stuffer to fill the casing with your choice of seasoned ground beef mix (butcherpacker has lots of seasoning mixes too). then cook the slim jims in your oven at 300 degrees until a meant thermometer reads at least 165. I put my thermometer down into a stick from the end, not cross ways.

after they are cooked through put them right into the dehydrator and dry them as they cool, this toughens up the casing a bit and really firms up the slim jims. you can vac bag and freeze for longer term storage, but they won't last long unless your batch is pretty big.

if you like a juicier slim jim then you can add some sausage phosphate from butcherpacker and just use the dehydrator for a few minutes to dry the casing.

I made more ground meat jerky this past week-end & it turned out great. I just mixed about one & one-half lb. of ground meat (no fat added) & a package of taco mix seasoning, about 1/2 cup salsa, some black pepper & some hot chili powder. I let it set about 1 hour then put it through my jerky gun. It comes out looking just like those slim jims. I let it dehydrate for about 5-6 hr. there was no fat or oil showing on the meat at all as it dried. Turned out great.
