Rhubarb recipies needed please

I had a lady stop at my booth yesterday at the farmers market and ask if i could use more rhubarb to sell. she said she had three plants and was too weak to pull it herself and it was going crazy. I said sure I can come pull it. I show up this morning and she takes me out to her backyard. It may have been 3 plants.... five years ago. I swear the bed was 7ft long and 4-5ft wide with rhubarb. I started pulling and pulling and pulled some more. I got about halfway through and said i would have to come back. I filled 2 kitchen trash bags im guessing around 40-50 lbs worth.... I gave some to a friend some to my aunt and kept some for me. I would like to make strawberry rhubarb jam as well as can some pie filling if anyone has good recipies.
Here is a pic this is about a 1/3 of what i ended up with.

Got a great recipe for you, everyone that tries it who does not like rhubarb likes rhubarb after. I just actually made this a few days ago.

Rhubarb Dessert

4 c rhubarb, cut into chunks
1 box yellow or white cake mix
1 package raspberry jello
1 c. sugar
1 c. cold water
1/4 c butter
nuts (I use pecans mostly)(optional)
coconut(optional)

greased 11x13 inch pan
Take cake mix, sugar and jello and mix together well in bowl
add rhubarb to the mixture, mix well.
add the water, mix well and add to pan.
add nuts and coconut to top of mixture.
melt butter, and drizzle over the top of everything, cook at 350°F for 1 hour.



The original recipe I have says to just put rhubarb int eh pan and then sprinkle all the ingredients over the top, but I find it works better and mixes better to mix it all together first in a large bowl. I have substituted the jello flavores on occasion as well as the type of cake mix- last time I used french vanilla cake mix.
 
Rhubarb Coffee Cake

1/2c. margarine
1 1/2c. sugar
1 egg
1c. buttermilk
1t. baking soda
1t. vanilla
1/2t salt
2 1/2c flour
3c. cut up rhubarb

Mix in order. Pour into a 9x13" greased and floured pan.

Sprinkle 1/2c brown sugar and 1/2c nuts.

bake at 350 degrees for 45 minutes.

In a sauce pan mix:

1/4c margarine
1/4c evaperated milk
1/2t vanilla
1/2c sugar

heat til sugar dissolves. Pour over warm cake after it is out of the oven.


This is my Grandmothers recipe. I have always loved this cake. I will make it for bake sales. It sells quickly.

If you have a dehydrator you can make rhubarb 7 strawberry fruit rollups.

1 cup of rhubarb cut up, add to 1/4 cup of water and simmer until soft.
1 cup of strawberries or more.
1/2 cup of honey.

Mix it all together in bender. Pour into trays and dehydrate. Lighty oil trays so they come off easier
 
Jump over to TEG, and do a search. There is a huge thread over there with tons of great recipes. Don't forget, you cut it up and freeze it. I do 4 c per bag, since that is what most of the recipes seem to call for. Enjoy!
