I keep chickens for the joy of keeping chickens. When a chicken no longer is a joy, it's gone. (No, I don't mean "rehomed".) If you want to spend the rest of that rooster's life (they can live for quite a long time) worrying about it attacking you every time you go to the coop, that is, of course, your choice. Personally, I wouldn't spend the next 6 or 7 years with a rooster like that. What kind of quality of life are you giving your rooster if you have to kick it HARD! every time you go to your chickens just to keep from being attacked? I'm not sure that's the kindest thing. Another thing to consider is the genetics he's passing along to his offspring. Is human-aggressiveness hereditary? I can't say for sure. Do you want to take that chance?
And this:
if they don't attack you they won't attack real predators. I respectfully disagree. There are plenty of roosters out there who are not aggressive toward humans that will still protect their flock. They just know who's top dog around the place, and it's not them.
As I said before, it's entirely your choice. You're the only one who knows how much you want to put up with from a rooster. If you decide to eat him, remember that there are lots of nice roosters out there needing a good home. Maybe you could help one of them out.
