Dominique looking one is female.
LB mix is male.
Crested blue mix is female.

Are you telling me that "speckled" and "grey with mohawk" are not the proper names?? You all must crack up at us newbies and our serious lack of knowledge hahaha

I have breeds that are 30 weeks old and not even started laying males don't get saddles at 8 weeks

I'm sure you do. So do I.
"Most breeds" is the key part.

12 weeks is the average saddle age, as the same poster already noted.

Both have feathered feet and are colored like Light Brahmas, but I'm seeing extra toes which makes me wonder who their other ancestors are

I saw the extra toes too...
Maybe a faverolle or dorking mix?

No, no! If they were my birds, Speckledy and Mohawk it would be!
Did you hatch them? I said Dominique looking mix because she has a rose comb and barred feathers. I have Dominiques (like the pullet in my avatar) and apart from the legs and slightly smudged barring, she looks like one.
I now see there are two Light Brahma mixes. Both are male.

I said most. My breed doesn't lay until close to 28-36 weeks. Most of the time they are older than that.

I agree that they aren't showing at 8 weeks.

That dude looks to be the dad of the blue, assuming you hatched them yourself.
Do you have any other roos?
