If you think you only have the 1 raccoon, you're mistaken. From what I have read, you can have anywhere between 3 to 100 per 1 square mile. It is perfectly legal to shoot raccoon any time of the year in Oregon. However, if you live in the city limits, your supposedly required to get a permit to transport it out of the city before shooting it. (Don't ask...don't tell)
Regarding the eating of Raccoon, I personally have never had it, but a friend of mine tells me it is quite tasty. There are numerous websites offering preparation tips and techniques. My friend tells me his mother used to make the absolutely flakest pie crust from Raccoon oil.
Right now I'm doing my darnest to trap a mother raccoon and 4 of the "cutest" little coons you've ever seen. My friend tells me that he'll take them when I get them trapped. What happens to them after that, I don't want to know.
To each his own....I just want my chickens to be safe.
