Frito Salad
1 pkg of frito's
2 cans of Red Kidney beans
1 jar Catalina Dressing (french can be substituted)
1 onion, diced
1 head of lettuce
1 pkg of cheddar cheese

Chop lettuce & onions place in a large bowl, (I usually serve mine in a punch bowl, looks nice). Drain Kidney beans, dump in bowl. Toss the salad. When almost time to serve add: whole bag of frito's and catalina dressing. Toss salad. Top with cheese. Makes an attractive dish, as well as a favorite. Easy, quick, and feeds several (20) (as a side)

Breakfast casserole

1 pound pan sausage or your favorite breakfast sausage, cooked like ground meat.
1 small onion, chopped
1 bell pepper chopped
6 eggs
1/2 cup milk
1/2 a package of shredded potatoes
1 cup of cheese your choice

Cover the bottom of a 9x13 pan with the shredded potatoes. Then layer sausage and veggies and top with the cheese. Beat the eggs and milk and pour over. Bake at 350 for 35-45 minutes or until a knife in the middles comes out clean.

I like my onions mushy and soft, so I cook the onion and bell pepper with the sausage to make them more tender but that's just me and my weird food issues. This also makes a wonderful breakfast burrito filling. I always make a double batch and fill about 20 tortillas with this and freeze for quick meals in the mornings.
 
Tuna Noodle Casserole

1 package of cooked bow tie pasta (we use spinach or tomato flavored pasta)

1 can of Cream of mushroom soup, or cream of celery, chicken or whatever

2 cans tuna un drained.

1 1/2 cups sour cream

2-3 cups milk (enough to cover noodles)

1 cup peas (if you like them)

Mix all these together, add seasonings (I never measure) such as Garlic Powder, Onion Powder, Seasoning Salt, pepper and some dill, stir into mixture.

Top with grated cheeses. I use sharp cheddar but most any kind will do.

Bake 350 for 25-30 minutes or until cheese is golden.

It's basic but very tasty and inexpensive.
 
Chicken Noodle Casserole

1 boiled chicken (deboned & diced)
1 large pkg of dry noodles
1 can cream of mushroom
1 can of cream of chicken
1 can of rotel
1/2 cup of chicken broth
1 pkg of shredded cheese

Preheat oven to 400.
Boil noodles according to pkg, drain. In a large bowl add cream of mushroom, chicken, rotel, broth. Mix well. Add noodles. Mix well. Salt & Pepper. Spray casserole dish with Pam, pour mixture into pan. Top with cheese, cook for about 15 to 20 minutes. (Till cheese melts and throughly heated).

* I have never tried this with chuck or hamburger, it might work though.

Does anyone know the recipe for Frito taco salad? Had it once, and Parsonswife's Frito Salad remided me of it.
