I have sheep. You can milk about any breed, but some milk more, like east fresians. I would try to find breeds that are closer to you, so it's easier to find a ram for breeding. You also want to think about what you want the sheep for. Just milk? Lamb for the freezer? Wool?
I personally don't like icelandics, just because they're too flighty and crazy for my tastes. Lots of people love them though.
And you're right, sheep aren't nearly as escape-prone as goats are! They DEFINITELY need a buddy. Never get just 1 goat or 1 sheep. They are very much herd animals and need at least 1 buddy.
You might be better off getting Nigerian Dwarf goats though. They milk really well and since they're smaller you can get 2 of them!
