Yes. Pop them. As cereal, they're the best!
On low heat, I take the tallest pot I have and warm it up. I occasionally sprinkle in a little Amaranth to test the temperature. When it's popping within seconds, it should be good. Then I gently scatter a tablespoon at a time of Amaranth in the pan. I let it set for a few seconds while they pop, then shake the pan around to get more to pop. When they're all popped, or close to all popped, I pour them in a bowl and move onto the next tablespoon.
These cook fast, so you want to keep a close eye on them and cook only on LOW heat. (I have it on 4 on my stove if you have that) If the Amaranth starts sticking, then the pot is too hot. They're kinda white when popped, not black! Just occasionally shake the pan around to cook them all. These pop high like popcorn, so be sure to have a high walled pot, pefered with the solid bottom if possible, but if not available, that's ok. Don't cover the pot, because you need to watch the Amaranth.
Then my Mom shakes cinnamon across the top of finished product and add maple syrup. You'll probably have to do this to taste. Then serve. Eat like cereal with milk and everything.
