Sourdough HOTCAKES

The NIGHT BEFORE mix 1/2 c Starter, 1 1/4 c Water, 1/2 c Flour, and let sit in warm place till the NEXT MORNING then add 2 Eggs, 1 T sugar, 1/4 t Salt, 1/2 c Flour, 2 T Oil and ADD LAST, just before cooking 1 ts Soda. Bake on a Hot griddle (water bounces). For WAFFLES just add a little more flour! Sourdough

BISCUITS: If you have dough left over, mix in some more flour for heavier dough, kneed a few minutes, cut with biscuit cutter, dip in butter or oil, and you have biscuits for lunch!

I have a cold also.. but the good news is, I now have Fridays off. Minor medical problems, but nothing to really worry about. I have a sleep study on the 23rd.

I have been averaging 4 eggs a day and I am selling the extras.

The chicks are a little over 3 weeks old and are a bundle of hopping fun.

When I got home yesterday, one of the chicks had gotten out of the pen. She must have jumped the barrier and squeezed out of the lattice. Anyway, as soon as I open the slider, I knew that something was wrong. I could hear the chick and Rumples making a racket. When I opened the door to the pen, the little black chick was scampering around trying to get into the broody pen. The big girls did not seem too interested in her. I open the gate to Rumples pen and in the little one ran, right to her feeder.

I need names for the two. I was thinking about Reba and Shania.

11 today plus 1 from yesterday makes a clean dozen. Mud season leads to dirty eggs!! Not too bad but enough to wash them for others.
