I was going to send you many recipes....

The apple muffin recipe I didn’t like calls for one egg, but I was distracted when Duckling finally woke, and we added two. It actually did the trick for a better muffin. Maybe I can use that recipe, with modifications, after all.
The fresh egg will be kept for an omelette or scrambled eggs.

More egg, oil or a teaspoon cornstarch would likely help.

Maybe it was a depression era recipe where cooks did not have access to as many ingredients?

Spring is coming. I am getting 5-7 eggs a day now. The fridge is full. I will be sharing eggs with the neighbors.
