So many questions. They are two different species... thus the different colored heads. Just pretty birds. As to game well we have aggressive boy turkeys that shut down traffic challenging cars in my town. Not sure if they have spurs never raised turkeys but if I did it would be ones like I posted, the blue headed birds are Meleagris ocellata. I think the flying bird was a picture taken in CA off of highway one, it could be a hybrid or a specific sub species... wild turkeys can be magnificent birds. I like my turkeys to be able to fly and run good so wild type is what I like.

Turkeys have spurs
The four species of turkeys in North America have red white and blue heads. Red faces like a rooster
Eastern, merriams, Osceola, rio grande

Nice how you picked out that I missed "sub" yet missed that I said "five" before i corrected it four. I'm aware they are subspecies though.
 
Five or six sibspecies according to paper linked below. Eastern Meleagris gallopavo silvesteris and Florida M. g. osceola distinguishable based on behavior and appearance, but not based on genetic markers used by authors. Paper is a bit dated where other more recently developed markers might provide resolution supporting behavioral and morphological evidence.

Check out video below. Note how fry move about or stay tight as a group. To my eye parents have role in determining direction group goes. Part of communication involves what appears to a form of clucking like a hen with chicks. Largemouth Bass may do similar to keep their broods intact.
