Had I been you I would have went with a pair from him honestly.
They are good birds, but one needs to cull accordingly with any blood no matter where they came from. No idea why you didn't mark your crosses Tex that'd help ya a ton.
They're marked. I can tell the grey crosses easily as the females are all black with grey peeking through the hackle, and the males with the obvious grey hackle. I'm talking about telling the black females apart from the black males. These two for example are male black grey crosses
 
I don't know much about raising them blacks to look for signs havoc will know and no harm in asking. But usually a more red in hackle, shoulder and saddle. By 8-12weeks it should be clear by just feathering on males vs females.

I personally don't get in to much of a rush because at 12weeks it's pretty clear as far as gender goes.

Sohc is right, you gotta overcome that nonsense and get it done! Imagine that chicken is the only thing your family has to eat, bet them Hunter instincts kick in....unless they have been bred out your blood lol
