If I understand the rules right, a hen can only carry one color but can be split to different patterns unlike a cock that can carry two different colors because he has two genes?

So your hen is IBBS. IF she has White Eye she could be IBBS/WE or IF she had Pied and WE she could be IBBS/Pied/WE. If you don't know the fathers background only breeding her will tell, so for now she is IBBS.

A little further explanation from those better qualified would be appreciated.
