How do you calm them down??
You get something to sit on and put it in the pen and just sit there with the birds. The more time you spend with them, the more time they get used to you. Also you find a very good treat and only give it to them by hand. Getting them to eat out of your hand gets them to trust you and overall feel more comfortable around you. It also helps when you already have at least one bird that is tame that way they see how the other bird is comfortable with you and they decide you are okay. Mealworms are very popular for hand feeding, so are unshelled, unsalted peanuts, bread, lettuce, etc. They will hesitate a lot before eventually one day they will take the food from you. It helps when they are hesitant to look away from them but still keep your hand out. I have found that when you don't watch them it can make them feel more comfortable to take food from your hand. Then once they are used to eating from your hand you can watch them eating from your hand. It also helps when the birds you have are hand raised, like Peep for example. Still I haven't had all of my birds since they were peachicks and they all come up to me and take food from me.

I've had mine since they were a day old. I hand raised then until I put the with the guineas who were a week older then I put them outside when the were 2 months old.
