I was wondering about that @perchie.girl after I posted. Wondering if for a good taste test, I should really crack them all and separate the white from the yolks, and then weigh out the SAME amount of yolk and the same amount of white, then add to the recipe.

Because yeah, I think the quail eggs are probably more yolk than white compared to a chicken egg.

I think chicken and duck are the same yolk to white ratio..but an interesting thought.
 
That steel sink hand rubbing thing is a good idea, I'll have to remember that.

I think it's easiest to just weigh your eggs. Most store bought eggs are in the 60-65g range, so it's easy to go from that. I think the white is better at binding fluids though, so if your yolk to white ratios differ a lot from chicken eggs you might want to account for that. Usually you need about one egg to bind a deciliter of fluids (so that's 2½ eggs per cup of fluids). More yolk will give a richer taste though.

Wow! Busy thread lately. Question for duck owners: about what age do ducks begin laying? I also gather from the comments that they are more seasonal layers?

Our fist two ducks were hatched early August so I am really not expecting anything fro. Them until spring. Not sure but we think we have one male one female.

Need more coffee!;)

I have a sick chicken today :( Poor little Eppie.

I've noticed I have seen people say red sex links are prone to disease--I think that may be true. Today I should get paid and will get some antibiotics, I'm pretty sure its just respiratory problems. Either way, she's one of my favorites and likes to be held, I don't want her to die.

I need more coffee too! My ducks started laying somewhere between 26 and 30 weeks. I have 8 females and 2 drakes. Around week 23 or 24 the mating game started then a few weeks later I found the first egg. The days are getting shorter and the air has a chill to it now in some days but they ducks are still laying everyday. So I don't know when they will stop for the winter.

thanks. Sounds about the same as chickens. This is our first duck experience. We really enjoy them. They crack us up when they get frisky and run around.

It depends on the breed of Duck. Like chickens, some are for meat and some are for eggs. Some are for both meat and eggs.

You can look it up--I saw a comparison once ant it is amazing--some lay eggs year round while some only lay in the spring.
