Well... that is the plan. I had some Pesto in the freezer still so I plopped 3 tbsp worth of pesto in the slow cooker with 3 large chicken breasts. I also found I had 1 head of garlic left, so I peeled all of it and threw it in too. Now the house smells WONDERFUL! I'm having company over tonight and I need to decide how to make these 3 chicken breasts feed 5 adults and 1 child. So I'm tossing around ideas in my head, and wanted to get some input? I'm thinking of maybe cutting it up and making some red potato salad with basil & oil vinegarette to make it into a meal? Or maybe use the chicken to stuff something, like a veggie with it? What do you think? Share some ideas or recipes and I can mess with it!
