Then theres this one, it hatched out of an "easter egger" shell, but hes totally different than my other EE and his legs aren't green, but he does have the puffy cheeks. Any idea what he is and whether he is indeed a he or a she.....

The Wyandotte looks like a pullet. The second looks like a mix. I'd guess pullet as well, but that type of coloring often means male, so that one I'd wait longer.
 
the first three are tricky, but I’m going to go out on a limb and say they are pullets even tho their combs look bigger. Could be wrong. The last two are both pullets. Since EEs are mixed it’s not surprising she isn’t consistent with what you expected her to be.
 
I'm also not 100% about them being male. They look muddy across the shoulders, something I look for in the other color varieties as a sign of them being males. I haven't kept a silver laced male yet, so I'm not positive if they follow the same pattern since they get white, not darker.
