I really don't think you have anything to worry about.
As chicken owners it's really easy to fall under the misconception that every chicken should be laying an egg every day. This is not the case!
Chickens all lay at different rates. I have an Orpington hen who only lays one or two eggs per week. She is only a year old. That's just her way, she's been like that from the start. My RIR hen, on the other hand, churns out an egg before 10am every single day and rarely misses one.
At one point I had 6 layers, and would get anywhere from one to six eggs per day!
The mottled look and the speckling on the eggs is not something I would worry about either. These can be caused by any number of factors (stress during the egg production process, poor nutrition, viruses etc.) Most of these things can be addressed by providing a quality layer feed, oyster shell, and a little free ranging time.
Our chickens are a lot smarter than we give them credit for. They pick up on our stresses, which in turn leads to stress for them. Just relax and enjoy them! They are being good girls and laying for you. Spend a little time loving them and talking to them, and I'm sure everything will be fine.
