Rhonda missed only one day so far with her beautiful green eggs. And Wanda, my Barred Plymouth Rock is definitely warming up in the bullpen.

So here's a question for you all. Given that it's really hard to cleanly peel fresh eggs that have been hard-boiled, and given that they don't come much fresher than the backyard, how does one cook said eggs so the shells come off without taking half the whites with them?

I usually take them right from the heat to the cold, but that didn't work. Store bought eggs that have been hanging around a bit have more air in them , so they peel cleanly. Someone suggested a pin hole in the egg to allow some air inside while cooking.

Any suggestions? I'm going to try the chicken recipe thread to see what they say.

Well.
Everything in life should be that easy. Used the search feature for "hard boiled eggs" and came up with the answer - or I should say multiple answers. But the easiest I found was this:

Bring water to a rolling boil. Gently add eggs one at a time using a ladle. Boil for 15 minutes then immediately immerse eggs in cold (iced?) water.

Practically everyone on the thread swore this worked. I will try it and report back. I sho' do love that egg salad!
 
Well, the coop's clean, feed restocked, fresh hay in the nest boxes. Ahhh. Such a good feeling.

Aggie is turning out to be a real steady layer. First thing every morning, she leaves me an egg. I guess that's how she justifies being so downright nasty to Rhonda!

4 weeks to chickie babies!! So eggcited. I can't wait for fresh eggs, store bought ones taste like blah compared to real ones. Even the $5 cage free ones. I don't understand why more people don't raise chickens.

Works for me 100% of the time. But it is also best to use your oldest eggs when hard boiling.

I also cleaned our coop from top to bottom today. Ahhhhh the fresh sent of pine shavings.
 
My neighbor just put in a hot tub. The wife and I are heading up there to soak our aged bones and suck down a couple of vodka tonics. Life is great.
