Seriously though-I'm going to have to wash some chickens in the next few days-these little cornish buggers are FILTHY. That should be a treat.

As far as pickles-do you like the dill or the bread and butter? The mix I used for the Dill is awesome, I got it at Ace, and I've got a Ball Canning recipe for bread and butter pickles. I'll dig it out and post it in the morning.
 
Tonight my friend with the farmstand gave me probably a whole bushel of soft tomatoes for sauce. Plus a bag of apples (I promised her a pie), some old corn for the girls and a bunch of kirby cucumbers.

I never made pickles before. I was thinking of giving it a try. Suggestions?
Not sure what you have available on the Island, but we have used 'Mrs. Wages' pickling spices. It is a complete pack, just add water and vinegar. No messing with measuring out multiple spices or tying them in a bag. Slice cukes how you like, we have done spears, slices and super thin sandwich slices with the Kosher Dill mix. And if you need just a little more liquid, it gives you the ratio to add more water/vinegar to stretch the pot. Pack cukes in jars, add hot liquid. We also make sure to add 1/8 tsp of Pickle Crisp from Ball. I have found 'Mrs. Wages' at Wal-Mart, but this year got it at Country Max. CountryMax had a better selection and acutally had it stocked on the shelf when they ran out (naughty Wal-Mart). They had dill, kosher dill, bread & butter, sweet pickles and also a salsa mix.
 
You use a crockpot to cook it all day-it's a tried and true one!

Apple cinnamon Butter

Apples, (a cooking apple)
Sugar (1 c. of sugar for every cup of applesauce)
Cinnamon oil
Canning jars
Lids & rings


Clean, core and peel apples, then cook apples and make applesauce. Put applesauce and sugar into crockpot and cook slowly all day. When it is done (the applesauce will turn brown), add cinnamon to taste (approximately 4 drops) and stir. Put applebutter in sterile canning jar. Boil lids and put onto jars then put rings on. Process 20 minutes

This is awesome, John is going to be so happy. He loves Apple Butter!

And it's easy-well, besides peeling the apples...I have apples caught in my hair, on my shirt, and caught in my wedding band. I really GET INTO my cooking.

Anyone know where I can find one of those corkscrew spiral thingamabobs that peels apples?
