I just threw this together the other day and LOVED it. First I saute some chopped baby spinach & diced up mushrooms in some butter. When it looks like this it's time to add the eggs. (you can add salt, pepper, garlic powder etc to taste at this time.) Add the eggs, and I top with a little shredded Mozzarella. Now the easy part. This is the easisest way to make fried eggs hands down. Cover the pan with a lid that fits well and wait. I usually have the heat fairly high. If it takes too long for the whites to cook, the yolks will cook too. Check occassionally till the whites are as cooked as you like. If we were flipping them, I like mine over medium. Whites completely cooked, but yolks still dippy. Serve with 2 english muffuns. ENJOY!!!
