Reading about celiac (sp) is so facinating. I have been studying cooking in resteraunt (not doing it!) And it is like the cooks nuclear bonds they freak out cleaning over it. Still not enough for someone like your friends daughter however.
It is great they caught it so she does not suffer!
It is fascinating. We even attempted gf for a while for my son's ADHD problems. It is so HARD! It helped his behavior but I couldn't continue with a move and NO support from my hubby. But a good friend like mine is a big gf advocate here in Tulsa and even has a blog. Her recipes are amazing and everyone loves them, which is a big deal for gf foods. Gluten is about more than just washing. Gluten is very sticky and cross contamination is a very big risk. In fact that's why flour and gluten are used as glues. Plus if you've ever scooped flour and then scooped sugar with the same measuring cup- you can't ever use that container of sugar to prepare gf foods. And the sheer number of foods and innocent sounding ingredients that contain gluten is staggering when you are trying to shop and cook gf.
