Sticky hardboiled eggs

Looking for the surest solution to hardboiling eggs that will have the membrane detach for easy peeling. Will this always happen to a fresh egg of 1-3 days old. Are there cooking methods to get around this? I prefer poached eggs but i'd like to have answers for my customers at market. Thanks one and all.
 
Appps is right, eggs hard-boil best when they're at least a week old, but I prefer to wait two weeks. As the egg ages, it decreases in volume, making the air pocket inside larger and loosening the membrane. I've actually got a batch just about ready to make tea-eggs...
